For example: if you want to know about woight loss market you can go to google keyword tool and search for "weight loss" it will then display some keywords and the amount of searches they get every month or day (I'm not sure) and the trend they have (a graph of monthly search trends) you can know something about the market by looking at the numbers, if the keyword "weight loss" has say 30.000.000 searches a month, that is a good market filled with people interested in it..etc. Hope this helped.
